Nutritionist, and mom, Jodie Shield, RD knows how it is. “Busy moms don’t always have time to plan ahead and make two meals each day,” said Shield. “Transforming last night’s dinner into tomorrow’s brown bag lunch, for her kids or herself, can save time and maximize budgets without cutting corners on nutrition.”

Here are a few smart things she recommends to bridge from dinner the night before, to lunch the next day:

  • Change It Up

    That meatloaf you served for dinner can easily crumble down into filling for tacos. Just break up, and sauté in a pan with taco seasoning. Wrap in a soft whole-wheat tortilla or layer on top of lettuce for a zesty salad. Add diced tomato, onion, light shredded cheese and some Hidden Valley® Original Ranch® Light Dressing and you’re all set.

  • Success from Surplus

    Serve too many veggies last night? All the faster to reheat leftover vegetables (eggplant, zucchini, sweet potato or snap beans) in the oven at 400° F for about 10 minutes. Let cool five minutes, then serve warm with ranch dressing to dip.

  • Breakfast for Supper

    Wake up your leftovers by raiding the egg crate. Use leftover veggies like tomatoes, bell peppers, onions and new potatoes in a quick and tasty Southwestern omelet, frittata or quiche.
