Pizza Wedge Salad

Ingredients

  • ½ cup chopped ripe olives
  • ½ cup shredded Parmesan cheese
  • 1 can (15.25 ounce) kidney beans, rinsed and drained
  • 1 cup Hidden Valley® Original Ranch® Dressing, divided
  • 2 (12-inch) pre-baked pizza crusts
  • 2 cups diced cooked chicken
  • 2 medium tomatoes, stem removed, seeded and diced
  • 4 ounces pepperoni, sliced and cut into quarters
  • 6 cups shredded romaine lettuce

Instructions

  • Preheat the broiler.
  • In a large bowl, toss the lettuce, chicken, tomatoes, half the cheese, beans, olives and ½ cup of the dressing until evenly coated and set aside.
  • Spread the remaining dressing and half Parmesan cheese on each pizza crust.
  • Broil 1 minute or until cheese has melted.
  • Remove from oven and top each pizza with half of the salad mixture.
  • Garnish with pepperoni pieces.
  • Serve immediately.
