Spinach Tortellini with Roasted Red Peppers

Ingredients

  • 2 packages (9 ounces each) fresh spinach tortellini
  • 1 jar (7 ounces) roasted red peppers or pimientos, rinsed and drained
  • 2 tablespoons unsalted butter or olive oil
  • 4 cloves garlic, peeled and minced
  • ¼ cup chopped fresh basil or 2 teaspoons dried basil, crushed
  • ½ cup chopped walnuts or pine nuts, toasted
  • 1 cup Hidden Valley® Original Ranch® Dressing
  • Fresh basil leaves (optional)

Instructions

Cook tortellini according to package directions, drain and set aside.

In a large saucepan over medium heat, melt the butter.
Add the garlic and saute for 2 minutes. Stir in the peppers, basil, and walnuts. Add the dressing, and cook stirring until well coated and heated through.

Serve Immediately garnished with the fresh basil leaves.
