Kickin' Chicken Salad with BBQ Ranch Dressing

Ingredients

  • ¼ cup Cajun spice mix
  • 2 teaspoons black pepper
  • 8 chicken thighs, bone-in
  • 1 large white onion, peeled and sliced into ¾-inch thick slices
  • 1 package (6 ounces) mixed lettuce
  • ½ cup grape or cherry tomatoes, halved
  • ½ cup baby carrots, cut in quarters lengthwise
  • 1 can (2¼ ounces) sliced black olives, drained
  • ½ cup shredded Cheddar cheese
  • ¼ cup KC Masterpiece® Barbecue Sauce Original
  • ½ cup Hidden Valley® Original Ranch® Dressing

Instructions

In a small bowl, mix Cajun spices together with black pepper.
Season chicken thighs with ½ of spice mixture and chill covered 2 hours.
Season the onions with the remaining spice mixture and set aside.

Preheat the grill.

Grill the chicken and onions over medium heat until for 15 minutes on each side or until the internal temperature of the chicken reads 175F and the onions are crispy. Remove from the grill and allow to cool.

Seperate the chicken meat from the bones and skin.

In a large bowl, mix lettuce, tomatoes, carrots, olives and cheese and dressing and toss to coat. Top with chicken and onion rings. Serve with the barbeque sauce on the side.
