Friday Night Cheesy Veggie Pizzas

Ingredients

  • ½ cup Hidden Valley® Ranch dressing
  • ¼ cup jarred marinara or spaghetti sauce
  • 1 cup mozzarella cheese, shredded
  • 4 medium whole wheat flour tortillas (or 4 whole wheat English muffins, split)
  • Finely chopped sweet onion
  • Finely sliced red and yellow peppers
  • Grated zucchini
  • Sliced black olives
  • Sliced tomato
  • Veggies laid out in bowls or on a cutting board:

Instructions

  • Preheat oven to 400°F. Cover two large baking sheets with foil (for easy cleanup) and spray with vegetable oil spray. Bake the tortillas blind (empty) for 4-5 minutes, turning halfway through. Remove from oven and set aside to cool enough for kids to handle. (If using English muffins, simple toast on lowest setting until just barely toasted.)
  • Meanwhile, in a small bowl, mix Hidden Valley Ranch dressing with marinara sauce. Spread a few tablespoons of sauce on each tortilla, followed by the cheese and veggies. Bake until cheese is bubbly throughout, about 6-8 minutes.
