Love Your Veggies
Tuna, Tomato & Vegetable Salad

Ingredients
- ½ cup diced celery
- ¼ cup extra-virgin olive oil
- ¼ cup sliced or chopped black olives
- ¾ cup sliced red onion
- ¾ pound fresh green beans blanched and cut in 1½ inch pieces
- 1 cup diced cucumber
- 12–14 ounces Albacore tuna, packed in water, drained
- 2 cups chopped tomato
- 2 tablespoons mayonnaise
- 3 hard-cooked eggs, chopped
- Shredded lettuce
Instructions
- Prepare all ingredients and toss together before arranging on a bed of shredded lettuce. For best results, chill before serving.
