Minestrone Salad

Ingredients

  • 1 box (9 ounces) small elbow pasta
  • 3 sweet Italian sausages, cooked and sliced
  • 2 medium tomatoes, seeded and diced
  • 1 red bell pepper, stemmed, seeded and diced
  • 1 can (15 ounces) red kidney or garbanzo beans, rinsed and drained
  • 1 cup sliced fresh mushrooms
  • 1 medium red onion, peeled and diced
  • 4 tablespoons freshly chopped Italian parsley
  • 4 tablespoons freshly chopped basil
  • 1 cup Hidden Valley® Organic Original Ranch® Dressing
  • ½ cup shredded Parmesan or Romano cheese

Instructions

Cook pasta according to package directions, drain, rinse, and let cool.

In a large bowl, add the remaining ingredients and toss until well coated. Chill covered for one hour before serving.
