| Pizza Wedge Salad |
| Ingredients |
6 cups shredded Romaine lettuce
2 cups diced cooked chicken
2 medium tomatoes, diced
1-2/3 cups shredded Parmesan cheese, divided
1 cup canned kidney beans, rinsed and drained
1/2 cup chopped ripe olives
1 cup Hidden Valley® Italian Ranch Dressing, divided
2 (12-inch) pre-baked pizza crusts (thin)
9 slices pepperoni, cut into quarters |

Prep Time: 40 min. Cook Time: 5 min.
Toss together lettuce, chicken, tomatoes, 1 cup cheese, beans, olives and 1/2 cup dressing; set aside. On each pizza crust, spread 1/4 cup dressing and 1/3 cup shredded Parmesan cheese. Broil 1 minute or until cheese has melted. Remove from oven and top each pizza with half of the salad mixture. Garnish with pepperoni pieces. Serve immediately.
Makes 8 servings.
