HVR Ranch Corn with Andouille Sausage Casserole

New & improved recipe! Andouille sausage has French roots, but is now considered a true Cajun classic. This spicy sausage, corn and ranch dish will take you down home to Louisiana. So dig in for a hearty breakfast, and let le bon temps rouler!

Ingredients (8)

For safe meat preparation, reference the USDA website. For dips, make and enjoy your dip creation. Then, refrigerate within 2 hours or discard.

    Preheat an oven to 350°F. Slice the sausage into coins and brown in a sauté pan until warmed through. Drain and set aside.

    In a large bowl, stir together seasoning mix, sour cream, butter, whole kernel corn, cream-style corn, corn muffin mix and sausage. Pour into a greased casserole dish. Bake for 45 minutes or until set in the middle. Sprinkle cheese on top and continue to bake until cheese is melted; about 5 to 10 minutes. Remove from oven and let stand at least 5 minutes. Serve warm.

Rated 4 out of 5 by from Easy and Tasty I made this last night. I used fully cooked Andouille so all I had to do was cut it up & heat the sausage quickly. I will use less creamed corn next time. Since there was to much moisture left after baking for 50 minutes. Very easy to prepare.

This dish traveled well and I cannot tell you how many people asked me for the recipe. We will certainly make this dish for potlucks in the future especially with summer get togethers right around the corner. I made 1 recipe change and I decided to use sweet Italian sausage instead of the Andouille sausage for this casserole.

My family loves andouille sausage (we are Southerners) and I always add it to my gumbo, but never would have thought to add it to corn casserole. It’s like a taste of heaven! I served it with a salad with Hidden Valley Ranch dressing and it was a perfectly complete meal!
