Brown Rice, Broccoli, Cheese and Walnut Surprise

  • ½ cup chopped walnuts
  • 1 onion, chopped
  • ½ teaspoon minced garlic
  • 1 tablespoon butter
  • 1 cup uncooked brown rice
  • 1 cup vegetable broth
  • 1 pound fresh broccoli florets
  • ½ teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese


  1. 1. Preheat oven to 350°F (175°C). Place walnuts on small baking sheet, and bake for 6 to 8 minutes or until toasted.
  2. 2. Melt butter in a medium saucepan over medium heat. Cook onion and garlic in melted butter for 3 minutes, stirring frequently. Stir in the rice, add the broth, and bring to a boil. Reduce heat to medium-low. Cover, and simmer until liquid is absorbed, about 7 to 8 minutes.
  3. 3. Place broccoli in a microwave-safe casserole dish, and sprinkle with salt and pepper. Cover, and microwave until tender.
  4. 4. Spoon rice onto a serving platter, and top with broccoli. Sprinkle walnuts and cheese on top.

Rated 5 out of 5 by from Delicious Ive made a recipe similar to this for many years using cream of mushroom soup (with no Hidden Valley Ranch). The Hidden Valley Ranch makes this extra delicious! This is a keeper for sure! *Everything* tastes better with Hidden Valley!
