Dill Pickle Ranch Potato Salad

Ingredients

  • 6 medium red potatoes,cooked, peeled and diced medium red potatoes,cooked, peeled and diced
  • ½ cup minced red onion minced red onion
  • 2 stalks celery, thinly sliced celery, thinly sliced
  • 4 hard-boiled eggs, peeled and chopped hard-boiled eggs, peeled and chopped
  • ¾ cup diced dill pickles diced dill pickles
  • ½ cup Hidden Valley® Pickle Flavored Ranch Dressing Hidden Valley® Pickle Flavored Ranch Dressing
  • ¼ cup plus 2 tablespoons mayonnaise plus 2 tablespoons mayonnaise
  • ¼ cup sour cream sour cream
  • 1 tablespoon Dijon mustard Dijon mustard
  • 2 tablespoons lemon juice lemon juice

Instructions

  • In a large mixing bowl, combine the potatoes, onion, celery, eggs and pickle, and stir gently to combine. Mix together the pickle ranch dressing, mayonnaise, sour cream, mustard and lemon juice in a small bowl and pour over the potato salad.
  • Gently stir to combine everything together, coating the potatoes and vegetables evenly without breaking everything up too much. Season to taste with salt and pepper. Chill until ready to serve.
