Ingredients
6medium red potatoes,cooked, peeled and dicedmedium red potatoes,cooked, peeled and diced
½cupminced red onionminced red onion
2stalkscelery, thinly slicedcelery, thinly sliced
4hard-boiled eggs, peeled and choppedhard-boiled eggs, peeled and chopped
fresh dill and/or parsley, for garnishfresh dill and/or parsley, for garnish
kosher salt and ground black pepper, to tastekosher salt and ground black pepper, to taste
Instructions
In a large mixing bowl, combine the potatoes, onion, celery, eggs and pickle, and stir gently to combine. Mix together the pickle ranch dressing, mayonnaise, sour cream, mustard and lemon juice in a small bowl and pour over the potato salad.
Gently stir to combine everything together, coating the potatoes and vegetables evenly without breaking everything up too much. Season to taste with salt and pepper. Chill until ready to serve.
