Broccoli Cheddar Cheezy Ranch Soup

Don’t be shy when it comes to showing off your cheezy side. This creamy broccoli soup is sure to be a mealtime go-to. You can pair it with salads or sandwiches, but it’s hearty enough to serve as one-bowl meal.

Ingredients

  • 4 tbsp. unsalted butter unsalted butter

  • ¼ cup all-purpose flour all-purpose flour
  • 1 ¾ cups whole milk whole milk
  • 1 ¾ cups low-sodium chicken or vegetable broth low-sodium chicken or vegetable broth
  • 3 cups chopped broccoli florets chopped broccoli florets
  • ½ cup Hidden Valley® Cheezy Ranch Dressing Hidden Valley® Cheezy Ranch Dressing
  • 1 ½ cups shredded cheddar cheese shredded cheddar cheese

Instructions

  • Melt the butter in a large pot over medium heat. Add the onion, ranch seasoning mix and pepper to taste, and cook, stirring, for 5 minutes, or until the onions are softened.
  • Sprinkle in the flour and whisk continuously for 1 to 2 minutes, or until the flour turns golden. Slowly pour in the milk, whisking continuously. Add the broth and broccoli and stir to combine.
  • Simmer for 15 to 20 minutes, or until the broccoli is tender. Stir in the Cheezy ranch dressing and gradually add the cheese, stirring until the cheese is melted and the soup is creamy.
  • Season to taste and serve immediately.
