Green Goddess Ranch Grain Bowls with Spring Greens

Ingredients

  • ¾ bunch asparagus, ends trimmed and cut into 1-inch pieces asparagus, ends trimmed and cut into 1-inch pieces
  • 1 ⅓ cups fresh or frozen peas fresh or frozen peas
  • 8 oz. sugar snap peas, trimmed and sliced into ½-inch pieces sugar snap peas, trimmed and sliced into ½-inch pieces
  • 1 large avocado, pitted and cut into large dice large avocado, pitted and cut into large dice
  • 4 soft-boiled eggs (optional) soft-boiled eggs (optional)
  • ½ cup Hidden Valley® Green Goddess Ranch Hidden Valley® Green Goddess Ranch

Instructions

  • Bring a pot of well-salted water to a boil. Add in the asparagus, and cook for about 3 minutes, until crisp-tender. Remove with a slotted spoon or strainer, leaving the water in the pot, and set aside.
  • Add the peas to the pot and cook for 2–3 minutes, drain and rinse under cold water or plunge into an ice bath to stop the cooking.
  • In each of four bowls, make a base of the grains. Arrange the cooked asparagus, cooked peas, snap peas and avocado around the grains. 
  • Add a soft-boiled egg, if desired. Drizzle with the Green Goddess Ranch and garnish with sliced scallions. Serve immediately.
