June has to be one of my favorite summer months. The weather starts warming up and the neighborhood comes out of hibernation. This is the time of year when people dust off their patio furniture, fill up the tiki torches and prepare the fire pit.
And the best thing about the arrival of June? Summer entertaining! During the summer months, our weekends are full of backyard barbecues, family gatherings and outdoor movie nights.
Because we're always having last minute summer gatherings, I like to be prepared with a quick and easy appetizer. Appetizers, especially dips, are by far my favorite type of food. I could easily make a meal out of just appetizers, and feel like summer and its parties afford me the opportunity to do so!
Believe it or not, with just a few pantry staples like Hidden Valley® Original Ranch® Dips Mix, you can serve up an amazing Cheesy Chicken Enchilada Dip in no time. This crowd-pleasing dip tastes just like a beloved enchilada recipe and is perfect for any summer get-together. It's creamy, cheesy and super filling, thanks to the tasty shredded chicken. Cheesy Chicken Enchilada Dip
Serves: 8–10

Total Time: 25–30 minutes
Product: Hidden Valley® Original Ranch® Dips Mix
INGREDIENTS
1 packet Hidden Valley® Original Ranch® Dips Mix1 (10-ounce) can red enchilada sauce
3 cups shredded cooked chicken
1 (4.5-ounce) can diced green chiles, drained
1 cup cheddar cheese
2 cups Monterey Jack cheese, divided
Tortilla chips, for serving
INSTRUCTIONS
Preheat oven to 350°F. In a large bowl, mix together the ranch dips mix packet and enchilada sauce. Stir until no clumps remain.
Stir in the chicken, green chiles, cheddar cheese and 1 cup of the Monterey Jack cheese. Carefully mix until well combined.
Pour mixture evenly into a 13x9-inch baking dish. Sprinkle remaining cheese evenly over the top. Bake for 20–25 minutes until cheese is melted and bubbly around the edges. Serve with your favorite tortilla chips for scooping.
