Looking for fun taco bowl recipes? Break outta your shell with these tasty one-bowl meals, loaded with juicy ground beef, refreshing veggies, crispy tortilla chips and topped with a zesty cilantro lime twist on Ranch.

ground beef

juice of one lime

kosher salt and ground pepper, to taste
shredded romaine lettuce

white or brown rice
3 cups
diced cucumber
1 ⅓ cups
diced red pepper
1 ⅓ cups
small avocados, peeled, pitted and diced

fresh cilantro, for garnish (optional)
tortilla chips, for serving
Warm oil in a large skillet set over medium heat. Add the ground beef and break up with spoon as it begins to cook.
Stir in ¼ cup water, lime juice and the ranch seasoning mix and continue to cook, stirring until the beef is slightly browned and cooked through (160°F), about 7–8 minutes total. Season to taste if needed.
To assemble, divide lettuce and rice between the bowls. Top with the ground beef, cucumber, pepper and avocado.
Drizzle each bowl with about 2 tablespoons of Cilantro Lime Ranch and garnish with fresh cilantro, if using. Serve immediately with tortilla chips on the side.
