  • Step 1
    Season the pork chops with 2 teaspoons of the seasoning mix and set aside.
  • Step 2
    In a shallow bowl, whisk the eggs with the barbecue sauce. On a plate or in another shallow bowl, mix the breadcrumbs with the remaining seasoning mix.
  • Step 3
    One at a time, dip each pork chop into the egg mixture, shake off excess, then press into the breadcrumbs on both sides.
  • Step 4
    Pour olive oil into a large pan so that it goes about ¼-inch up the sides and set the pan over medium heat. Cook pork chops until golden brown and cooked through, about 3 minutes per side (you may need to do this in batches). Drain on paper towels and serve hot.
