Cheesy Mediterranean Turkey and Pasta Bake

1 tablespoon olive oil
½ cup diced red bell pepper
2 cups cooked orzo
3 cups shredded, cooked turkey
½ cup shredded Swiss cheese
Step 1Preheat the oven to 350°F.
In a large pan, heat the oil over medium heat, add the peppers and cook for 5 to 7 minutes or until softened. Stir in the orzo, turkey and dressing and stir evenly to coat.
Place the mixture into an oiled 8x8-inch baking dish and top with the cheese.
Bake for 20 minutes or until the cheese has melted and is lightly golden. Let stand for 5 minutes before serving. (For an added pop of color, garnish with chopped parsley).
