Combine the chicken, celery, onion avocado, olives and chilies together in a bowl. In another bowl, whisk together the prepared dressing, cilantro, parsley, lime juice and cumin. Toss with salad ingredients. Chill until ready to serve.

Rated 3 out of 5 by easybakeovenluva from Needs tweaking But Great idea! Im a big fan of lettuce cups becasue I think they are a great healthy no carb snack or appetizer. I am glad to find a recipe for lettuce cups other than the traditional asian recipe. However I found that the olives in this recipe tasted kinda weird with the cilantro and other ingredients so I would leave them out. If you are going for true cuban you should add raisins or golden raisins
