Chicken & Stuffing Slow Cooker Casserole

Calling all pot pie and casserole fans, we've got one for the recipe books.

Ingredients (5)

For safe meat preparation, reference the USDA website. For dips, make and enjoy your dip creation. Then, refrigerate within 2 hours or discard.

    In a small bowl, combine ½ cup dressing, cream of chicken soup, and ½ cup water. Set aside.
  2. 2
    Spread frozen vegetables on the bottom of a slow cooker pot. Layer chicken on top, followed by the dry stuffing mix, then pour dressing mixture over stuffing mix.

    Cover and cook on high for 4 hours or until chicken reaches an internal temperature of 165°F.

    When ready to serve, gently stir in remaining ½ cup dressing.

    Tips: For a spicy version, substitute Hidden Valley® Southwest Chipotle Dressing instead of Ranch. For fewer calories, try Hidden Valley® The Original Ranch® Light Dressing instead of the full-calorie Ranch.

      Spread frozen vegetables in the inner pot of your multi-cooker. Layer chicken on top, followed by the dry stuffing mix, then pour dressing mixture over stuffing mix.

      Turn on the multi-cooker and secure the lid, setting pressure valve to “sealing.” Select “manual” or “pressure cook” and cook on high-pressure for 10 minutes. Select “cancel” to turn off the machine.

      Allow the pressure valve to natural pressure release for at least 10 minutes, then quick-release the pressure by turning the seal to “venting.” When ready to serve, gently stir in remaining ½ cup dressing.

Rated 4 out of 5 by from I made some changes This is actually almost the same recipe as one I made in the past, but that one called for slices of ham (lunch meat) and Swiss cheese slices instead of frozen veg (I'm not a fan of frozen veg) and milk instead of the Hidden Valley Ranch dressing. I'm so glad I saw this recipe because I never would have thought to substitute Ranch for milk. It was waaaay better with the Hidden Valley Ranch. It gave it more flavor and more pizzazz. I gave this recipe 4 stars because I personally don't like the veg, and I thought the ham and cheese was a better choice. But for people who like frozen veg, the combination of the cream of chx soup, ranch dressing, chx breasts, and stuffing is delicious and comforting.

I checked at 3 hours and 15 min my chicken breasts 3 skinless boneless were already past temperature and had rendered lots of liquid so when I tried to slightly stir in additional end dressing it was mushy. However flavor was still good and my youngest said it was like gravy so no complaints actually my husband said good like chicken and dumplings. I added about 1/4 cup Parmesan sprinkle cheese and a bit of pepper to top after I had added dressing. It was a hit . I’ll adjust temperature next time.
