Cool Cucumber and Tomato Salad

- 1 head butter lettuce
- ¾ cup Hidden Valley® Original Ranch® Organic Dressing
- 1 medium English cucumber peeled, coarsely chopped
- 1 tablespoon freshly chopped mint
- 1 tablespoon freshly chopped parsley
- 4 medium tomatoes stems removed, seeded, diced
- 4 ounces feta cheese crumbled
- 1. In a large bowl, combine the tomatoes, cucumber, mint and parsley and toss with just enough of the dressing to evenly coat the salad. Chill covered for 30 minutes.
- 2. Serve on a bed of the butter lettuce leaves topped with the crumbled feta cheese and the remaining dressing on the side.
