Cool Cucumber and Tomato Salad

  • 1 head butter lettuce
  • ¾ cup Hidden Valley® Original Ranch® Organic Dressing
  • 1 medium English cucumber peeled, coarsely chopped
  • 1 tablespoon freshly chopped mint
  • 1 tablespoon freshly chopped parsley
  • 4 medium tomatoes stems removed, seeded, diced
  • 4 ounces feta cheese crumbled


  1. 1. In a large bowl, combine the tomatoes, cucumber, mint and parsley and toss with just enough of the dressing to evenly coat the salad. Chill covered for 30 minutes.
  2. 2. Serve on a bed of the butter lettuce leaves topped with the crumbled feta cheese and the remaining dressing on the side.
