Cool Cucumber and Tomato Salad

4 medium tomatoes, seeded and diced
1 medium English cucumber, peeled and roughly chopped
1 tablespoon freshly chopped mint
1 head butter lettuce, rinsed well and dried
4 ounces crumbled feta cheese
Step 1In a large bowl, combine tomatoes, cucumber, and mint, and toss with just enough dressing to evenly coat the salad. Chill covered for 30 minutes.
Step 2Serve on a bed of butter lettuce leaves, top with crumbled feta cheese and the remaining dressing on the side.
