  • ¼ cup parsley chopped
  • ¼ teaspoon dill weed chopped
  • 2 tablespoons whole milk
  • 2 pounds small red potatoes cooked, cooled, sliced
  • 3 scallions sliced, white and green parts
  • salt
  • freshly ground pepper

Steps (1)

  • Step 1
    In a large bowl, whisk the dressing together with the milk, dill, parsley, and scallion until smooth. Add the potatoes and stir until evenly coated. Season with salt and pepper. Chill covered for at least 1 hour (3 hours is best) before serving.

    For dips, make and enjoy your dip creation. Then, refrigerate within 2 hours or discard.

Rated 4 out of 5 by from A Time Saver I found frozen red potatoes at the grocer's and made this recipe fairly quickly. I was concerned that it wouldn't turn out well, but it actually tasted pretty good. I thawed the potatoes a bit before cooking, which helped.
