Crunchy Ranch Potato Chips

olive oil cooking spray
2 pounds potatoes, thinly sliced
2 tablespoons extra-virgin olive oil
2 tablespoons Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker, divided
Step 1Preheat oven to 400°F. Lightly coat 2 rimmed baking sheets with cooking spray; set aside.
Step 2Place sliced potatoes in a large bowl and toss with the olive oil until evenly coated. Add 1 tablespoon of the ranch seasoning and toss to evenly coat.
Step 3Arrange the potatoes on prepared baking sheets, spacing them ¼-inch apart. Bake, rotating sheets halfway through, until potatoes are crisp and golden brown, about 30 minutes.
Step 4Spread out potatoes on parchment paper; let dry 5 minutes. Sprinkle with remaining tablespoon seasoning mix and serve.
