broccoli, cut into medium-size florets 1 head

minced garlic 2 cloves

freshly ground black pepper, to taste

Bring a pot of salted water to a boil. Add broccoli and cook until tender, about 6–8 minutes. Drain and set aside.

Preheat the oven to 425°F. In a small bowl, mix together the olive oil, ranch seasoning mix, garlic and black pepper.

Spread half the olive oil mixture on a parchment-lined baking sheet. Lay the florets down into the mixture, and using the bottom of a glass or heavy small pot, smash the broccoli until it is about ½-inch thick. Brush remaining mixture on top of the florets.

Bake for about 18–20 minutes, until the edges of the broccoli are crisp. Cool slightly, then transfer to a serving platter. Drizzle with the garlic ranch dressing or serve on the side for dipping.
