Greek Sweet Potato Dip

Ingredients (6)

  • 1 large (about 1 pound) sweet potato, cooked until very soft and tender
  • juice and zest 1 lime
  • ½ teaspoon smoked paprika
  • kosher salt and freshly ground pepper, to taste
  • pita chips, for serving

Steps (3)

  • Step 1

    Scoop out the soft flesh from the sweet potato and spoon into the bowl of a food processor.

  • Step 2

    Add the dressing, lime juice and zest, smoked paprika, and salt and pepper. Process until you have a nice smooth consistency.

  • Step 3

    Serve the dip with pita chips.

  • For dips, make and enjoy your dip creation. Then, refrigerate within 2 hours or discard.
