Cilantro Lime Grilled Shrimp Bowls

large shrimp, peeled and de-veined

chopped romaine lettuce

brown rice

small avocados, peeled, pitted and sliced thin

wood skewers (soaked) or metal skewers

Preheat a gas or charcoal grill using Kingsford® Charcoal to medium-high heat and grease the grates. Season shrimp with the ranch seasoning mix, plus a little bit of salt and pepper. Thread about 4 shrimp each onto soaked wood or metal skewers to make grilling easier.

When the grill is ready, place shrimp skewers directly on the grates and grill for about 2–3 minutes; then flip and cook 1–2 minutes more, until opaque and shrimp internal temperature reaches 145°F. Remove shrimp from skewers and set aside .

To assemble, place 1 cup lettuce and half a cup rice each into 4 bowls. Top with the shrimp, sliced avocado and corn.

Drizzle each bowl with about 2 tablespoons of Cilantro Lime Ranch and garnish with sliced green onions, if using. Serve immediately.
Ingredient Tips:
Shrimp: Use large or jumbo shrimp for best texture and easy grilling.
Grains: Cook in broth instead of water for extra flavor.
