Good and easy
A simple take on a classic. I think most vegetable would work. I used beans and zucchini

Good, change up the beans.
This was good. I change up the beans. I used white kidney beans instead, a softer skin, much better.

I don't like beans, so I would leave them out and replace with a fresh veggie.

Easy to Make
This appears to be a healthy and tasteful dish, but we've definitely had better pasta meals. Next time I will skip the mixed veggies and add an alfredo sauce - I did enjoy the broccoli, however.

A cold weather treat.
This vegetarian one-dish meal is great for snowy nights. Plenty of vegetables, no salad necessary. Just add some crusty Italian bread.
