In a large skillet set over medium-high heat, cook the sausage, breaking up with a wooden spoon into small crumbles, until no longer pink inside.

Add cream cheese, diced tomatoes, and dips mix, and cook, stirring, until cream cheese is melted. Pour into a bowl and serve warm with tortilla chips, for dipping.

I have also tried turkey sausage which was less well-received an the consensus was that the dish lacked the depth of flavor traditional pork sausage provides. Roasted red peppers also provided a nice different flavor profile in place of the tomato and I've even tried using vegetarian "sausage" crumbles with some measured success. be brave, experiment!
