cauliflower, cut into small florets (about 8 cups) 2 medium heads

bacon, cooked & chopped 8 slices

shredded cheddar cheese, divided 2 ½ cups

1Pre-heat oven to 350°F. Lightly butter a 2-quart baking dish.

2Bring a large pot of salted water to a boil. Add the cauliflower and cook until tender, 10–15 minutes. Drain completely, then return to the same pot.

3Use a potato masher to mash the cauliflower, then add the cream cheese, sour cream, Hidden Valley® Original Ranch® Seasoning, Salad Dressing & Recipe Mix Packet, bacon, and half of the cheddar cheese and scallions, mixing until incorporated. Transfer to the buttered baking dish.

4Top casserole with the remaining cheddar cheese, then bake on oven middle rack for 10–12 minutes until the cheese is melted and bubbly. Garnish with the remaining scallions before serving.
