  • Step 1
    Pre-heat oven to 350°F. Lightly butter a 2-quart baking dish.
  • Step 2
    Bring a large pot of salted water to a boil. Add the cauliflower and cook until tender, 10–15 minutes. Drain completely, then return to the same pot.
  • Step 3
    Use a potato masher to mash the cauliflower, then add the cream cheese, sour cream, Hidden Valley® Original Ranch® Salad Dressing and Seasoning Mix, bacon, and half of the cheddar cheese and scallions, mixing until incorporated. Transfer to the buttered baking dish.
  • Step 4
    Top casserole with the remaining cheddar cheese, then bake on oven middle rack for 10–12 minutes until the cheese is melted and bubbly. Garnish with the remaining scallions before serving.
