2 medium heads cauliflower, cut into small florets (about 8 cups)
8 oz. cream cheese
⅔ cup sour cream
8 slices bacon, cooked & chopped
2 ½ cups shredded cheddar cheese, divided
¼ cup diced scallions, divided
Step 1Pre-heat oven to 350°F. Lightly butter a 2-quart baking dish.
Step 2Bring a large pot of salted water to a boil. Add the cauliflower and cook until tender, 10–15 minutes. Drain completely, then return to the same pot.
Step 3Use a potato masher to mash the cauliflower, then add the cream cheese, sour cream, Hidden Valley® Original Ranch® Seasoning, Salad Dressing & Recipe Mix Packet, bacon, and half of the cheddar cheese and scallions, mixing until incorporated. Transfer to the buttered baking dish.
Step 4Top casserole with the remaining cheddar cheese, then bake on oven middle rack for 10–12 minutes until the cheese is melted and bubbly. Garnish with the remaining scallions before serving.
