Mint and Corn Tabbouleh Grain Salad

Ingredients (7)

  • 3 cups cooked bulgur, prepared according to package instructions
  • 1 can (15¼ ounces) corn, drained
  • 4 tablespoons fresh mint leaves
  • 1 cup diced tomato
  • ½ teaspoon kosher salt
  • 1 cucumber, peeled and diced

Steps (2)

  • Step 1
    In a large bowl, combine bulgur, corn, mint, tomato and dressing, and toss until well coated. Season to taste with salt.
  • Step 2
    Chill covered for 1 hour before serving. When ready to serve, stir in the cucumber.
