Preheat oven to 425°F. Lightly grease a baking sheet.
In a large bowl, toss potatoes with egg until all the slices are well-coated and shiny. Sprinkle with cornstarch, Parmesan, about ½ packet of seasoning mix (you can use more or less depending on your taste preferences), and pepper; stir gently to evenly distribute the coating.
Transfer potatoes to prepared baking sheet and bake for 20 minutes. Flip potatoes and continue to bake until crisp and browned, another 20 to 25 minutes.
