  • Step 1
    Preheat the oven to 425°F and lightly grease cookie sheet.
  • Step 2
    Scrub potatoes and slice them into thin spears.
  • Step 3
    Place potatoes in large bowl and pour beaten egg over them; stir until all potato slices are shiny from egg.
  • Step 4
    Sprinkle with cornstarch, parmesan, and about ½ packet of Ranch dressing mix (you can use more or less depending on your taste preferences).
  • Step 5
    Stir gently to evenly distribute coating.
  • Step 6
    Turn potatoes onto cookie sheet.
  • Step 7
    Bake at 425°F for 20 minutes.
  • Step 8
    Flip the potatoes and bake another 20–25 minutes until crisp and browned.

Rated 5 out of 5 by from Super yum! was thinking potatoes - same old, same old - so went searching for this recipe and my family loved it. Super easy ....i actually had the small red potatoes on hand so just used those - worked great and everyone loved the Hidden Valley Ranch flavor on the potatoes
