Dill Pickle RanchPotato Salad

medium red potatoes,cooked, peeled and diced
- ½ cup
minced red onion
- 2 stalks
celery, thinly sliced
- 4
hard-boiled eggs, peeled and chopped
- ¾ cup
diced dill pickles
- ½ cup
- ¼ cup
plus 2 tablespoons mayonnaise
- ¼ cup
sour cream
- 1 tablespoon
Dijon mustard
- 2 tablespoons
lemon juice
fresh dill and/or parsley, for garnish
kosher salt and ground black pepper, to taste

In a large mixing bowl, combine the potatoes, onion, celery, eggs and pickle, and stir gently to combine. Mix together the pickle ranch dressing, mayonnaise, sour cream, mustard and lemon juice in a small bowl and pour over the potato salad.

Gently stir to combine everything together, coating the potatoes and vegetables evenly without breaking everything up too much. Season to taste with salt and pepper. Chill until ready to serve.
