medium red potatoes,cooked, peeled and diced 6

minced red onion ½ cup

celery, thinly sliced 2 stalks

hard-boiled eggs, peeled and chopped 4

diced dill pickles ¾ cup

plus 2 tablespoons mayonnaise ¼ cup

sour cream ¼ cup

Dijon mustard 1 tablespoon

lemon juice 2 tablespoons

fresh dill and/or parsley, for garnish

kosher salt and ground black pepper, to taste

In a large mixing bowl, combine the potatoes, onion, celery, eggs and pickle, and stir gently to combine. Mix together the pickle ranch dressing, mayonnaise, sour cream, mustard and lemon juice in a small bowl and pour over the potato salad.

Gently stir to combine everything together, coating the potatoes and vegetables evenly without breaking everything up too much. Season to taste with salt and pepper. Chill until ready to serve.
