Ranch and Garlic Mushroom Kabobs

3 tablespoons olive oil
5 cloves minced garlic
3 sprigs thyme, destemmed
1 pound cremini (baby bella) mushrooms, rinsed and dried
1 onion, cut into 1-inch pieces
minced parsley, for garnish (optional)
6 wooden or metal skewers, soaked at least 15 minutes if wooden
Step 1Preheat a grill to medium-high. In a bowl, combine seasoning mix, olive oil, garlic and thyme. Add mushrooms to olive oil mixture and toss until evenly coated.
Step 2Thread mushrooms and onions onto skewers. Place on grill. Cook for 3–4 minutes per side. Remove from grill and garnish with chopped parsley. Serve hot.
