Ranch Potato Galette in a Slow Cooker

    With cooking spray, grease the bowl of a slow cooker. Stack half of the potatoes in the slow cooker.

    In a small saucepan, add the butter and place over medium heat. Add the flour and whisk until combined. Continue to cook for 3 minutes, stirring constantly. Add the milk, while vigorously whisking. Bring to a simmer and cook, stirring constantly, until thick, about 7 minutes. Add the Hidden Valley® Original Ranch® Seasoning, Salad Dressing & Recipe Mix Packet, thyme, nutmeg, salt, pepper and cheese, and stir to combine and to melt the cheese. Pour half of the sauce over half of the potatoes, but do not stir.

    Layer the remaining potatoes on top. Pour remaining sauce on. Place paper towels over the bowl of the slow cooker and place the lid on top. Cook on low for 3–4 hours.

      In a small saucepan, add the butter and place over medium heat. Add the flour and whisk until combined. Continue to cook for 3 minutes, stirring constantly.

      Add the milk while vigorously whisking. Bring to a simmer and cook, stirring constantly until thick, about 7 minutes. Add the Hidden Valley® Original Ranch® Seasoning, Salad Dressing & Recipe Mix Packet, thyme, nutmeg, salt, pepper and cheese. Stir to combine and melt the cheese.

      Pour half of the sauce over half of the potatoes, but do not stir. Layer the remaining potatoes on top. Pour remaining sauce on along with ½ cup water.

      Turn on the multi-cooker and secure the lid, setting pressure valve to “sealing.” Select “manual” or “pressure cook” and cook on high-pressure for 25 minutes. Select “cancel” to turn off the machine.

      Allow the pressure valve to natural pressure release for at least 5 minutes, then quick-release the pressure by turning the seal to “venting.” Serve warm.

I purchased ingredients for this based on the ingredients list and didn't actually read through the entire recipe until I was cooking. Bad call on my part! Although not listed in the ingredients, in the actual recipe steps it says to add thyme, salt, and pepper in addition to the other ingredients! I have salt and pepper, but not thyme... I found the finished product good but not great. I wonder if the thyme would have made a difference! Since those ingredients weren't listed, there are also no measurements for them. I just put in a few shakes each of salt and pepper, but might very well have needed more for all I know. If you make the full amount listed in the recipe, the sauce will actually end up being spread rather thin. I made it with the same amount of sauce ingredients but only 2 lbs. of potatoes, and it came out saucy but not overly so. I would probably say the right ratio would be more like 3 lbs. of potatoes to balance out well with the amount of sauce the listed ingredients end up making. (I would have given this recipe 4 stars if it had been complete, but had to take off a star for the missing information!)
