Roasted Cauliflower with Creamy Jalapeño Bacon Ranch

1 head cauliflower, cut into florets
2 tablespoons olive oil
½ teaspoon kosher salt
2 tablespoons chicken broth
2 slices crisp bacon, crumbled
parsley, for garnish (optional)
Step 1Preheat the oven to 450°F. Spray a small rimmed baking sheet with cooking spray.
Step 2Combine the cauliflower, oil and salt in a large bowl; toss to coat well. Spread the cauliflower in a single layer on a baking sheet. Roast, stirring once or twice, until the cauliflower is just tender, about 20 minutes.
Step 3Meanwhile, in a nonstick skillet set over medium-high heat, stir the Jalapeno Bacon Ranch with the broth, and bring to a simmer. Add the roasted cauliflower, tossing gently to coat well. Transfer to a serving bowl and sprinkle with bacon and parsley, if using. Serve warm.
