uncooked orzo 1 cup

Bartlett Pears peeled, or Anjou Pears, cored, diced 2

raisins 1 cup

baby spinach 1 bag (6 ounces)

sliced almond accents, optional 2 tablespoons

1Prepare orzo according to package directions. Drain and cool.

2In a medium bowl, mix the orzo, pears, raisins and dressing until well blended. Chill, covered, for 30 minutes.

3Divide the spinach evenly between 4–6 plates. Spoon equal amounts of pear salad over the spinach and served topped with almonds.
