Cook rice according to package directions, omitting salt. During last five minutes of cook time, quickly remove lid and add beans and corn; replace lid immediately. When rice is done, remove saucepan from heat; add dressing mix and stir. Let stand 5 minutes.
Stir in cheese, tomatoes and green onions. Serve immediately.

TastyWe do Mexican at least once a week so its nice to find a new recipe that everyone ends up enjoying it gives us more variety. This one is so good. Everyone loved it so it will for sure be going into rotation.

Nice overall tasteThis is a tasty side dish. I used basmati rice and it worked very well with the Hidden Valley Ranch, vegetables and cheese.
