Ingredients (7)

2 pounds medium shrimp, peeled and deveined, tails removed

3 tablespoons olive oil

1½ teaspoons Cajun seasoning

½ cup diced red pepper

4 long sandwich rolls

optional garnishes: sliced tomato, sliced avocado, fresh cilantro, lime wedges

Step 1
Prepare a grill for direct cooking over medium heat using Kingsford® Charcoal. Thread shrimp on skewers, coat with olive oil and sprinkle with Cajun seasoning.

Step 2
Grill shrimp until opaque and firm, about 3–5 minutes on each side. Remove
from the grill when done and let cool before removing from skewers. -
Step 3
In a large bowl, mix the red pepper, dressing and cooled shrimp.

Step 4
Add ¼ of the shrimp salad to each sandwich roll. If desired, garnish with sliced tomato, sliced avocado or cilantro. For an added pop, squeeze fresh lime juice over the top.
