Sunny’s Apple-Chicken Ranch Slaw

½ cup apple cider vinegar
¼ cup extra-virgin olive oil
2 tablespoons sugar
kosher salt and freshly ground black pepper, to taste
1 grocery store rotisserie chicken, skin removed and meat shredded
1 head red cabbage, shredded
2 green apples, cut into matchsticks
Step 1In a large bowl, whisk together vinegar, olive oil and sugar until dissolved, then stir in dressing. Taste and season with salt and pepper.
Step 2Fold in chicken, cabbage and apples, tossing well to combine. Cover and let sit refrigerated for at least 1 hour before serving.
