juice from ½ lime
cooked, shredded chicken (suggestion: pull meat from a rotisserie chicken) 2 cups
rotini pasta, cooked to al dente and rinsed with cold water 16 oz. package
black beans, drained and rinsed 14.5 oz. can
corn, drained 14.5 oz. can
diced tomatoes 14.5 oz. can
green onions, sliced (white and light green parts only) 1 bunch
chopped cilantro ¼ cup
shredded cheddar or cojack cheese 1 cup
crumbled Doritos 1 cup

In a medium bowl, combine seasoning mix, mayo, sour cream and lime juice. Mix well and set aside.

In a large bowl, combine chicken, pasta, black beans, corn, tomatoes, onions and cilantro. Mix well and refrigerate until ready to serve.

When ready to serve, top with cheese and Doritos!

Rated 5 out of 5 by Mollymom from Really great recipe I tweaked it slightly by adding a packet of taco seasoning and adjusting the amount of mayo and sour cream to 1 1/2 cups each. I used 2 packages of rotisserie chicken from the grocery store and it was great! I forgot to add the Doritos but I think the taco seasoning mix made up for it. My husband loved it and said it would be a keeper for our summer get together. Thanks for the great recipe!!!!
