Easy Tater Tot Waffles

    In a mixing bowl, lightly mash the tater tots. In a separate bowl, mix together the sour cream, mayo, ranch seasoning powder, egg, flour and cheese until well combined.

    Fold the dressing mixture into the frozen tots (the batter should be firm and hold its shape). Heat a waffle iron until hot and brush with vegetable oil.

  3. 3

    Spoon about 1/3 cup batter into the waffle iron, or enough for it to reach the edge and be about ¾-1-inch thick. Cook until golden brown and crisp, about 5–7 minutes; keep warm and repeat with remaining batter.

    Serve hot, sprinkled with some extra cheese and sliced scallions, with a bowl of ranch for dipping.

You can substitute for lower calorie versions of the same ingredients or substitute for healthier alternatives where possible. I did add a few extra ingredients to liven up the waffles; which again, that was easy enough to do with this recipe. All in all, this is a decent recipe. Definitely recommend trying, as well as, making it “your own”

I never liked potato pancakes since they were always way too greasy and fattening.....BUT waffle style with some hidden valley ranch seasoning just blew my mind!!!!!! The second time I made these, I put a sunny side up egg on top of the waffle....breaking into that egg, and having it drip alllllll over the potato waffle was like heaven!!!!!!!!
