Thai Beef Salad

1 cup mayonnaise
½ cup unsweetened coconut milk
1 pound roast beef, thinly sliced
4 ounces English cucumber, thinly sliced
1 cup fresh bean sprouts
chopped peanuts and cilantro, optional
Step 1In a small bowl, combine seasoning mix with mayonnaise and coconut milk until well blended and chill, covered, for at least 30 minutes.
Step 2Arrange beef, cucumber slices, and sprouts on large platter. Drizzle the dressing over the salad. Garnish with the peanuts and cilantro, if using, and serve.
