Turkey & Stuffing Bake

Ingredients (7)

  • ¼ cup butter, plus more for greasing
  • 1 container (14.5 ounces) mirepoix (about 1 cup each diced onions, carrots and celery)
  • kosher salt and freshly ground black pepper, to taste
  • 3 cups (about 1 pound) coarsely shredded, cooked turkey
  • 3 cups seasoned stuffing mix
  • cup dried cranberries

  • Step 1

    Preheat oven to 350°F. Grease an 8-inch square baking dish with butter.

  • Step 2

    In a large skillet, melt the ¼ cup butter over medium-high heat. Add mirepoix and cook until just tender, about 5 minutes; season with salt and pepper.

  • Step 3

    Remove pan from heat and stir in the dressing, along with ¾ cup water. Fold in the turkey, stuffing mix, and dried cranberries until thoroughly moistened.

  • Step 4

    Transfer mixture to the prepared baking dish and bake uncovered until browned and heated through, about 35 minutes. Serve immediately.

We like cornbread dressing so I made a pan of cornbread and cut it into chunks and put it in the oven to dry out. Doubled the celery and used a Buch of green onions (onion cooked only one minute). Added one can cream of chicken soup and laid the slicked turkey brad on top of the dressings about with a few drops of water to add moisture about half way through heating (covered with foil after turkey added). Young grandkids even loved it..
