small, cooked boneless, skinless chicken breasts, cut into 16 1-inch chunks 2
red or black seedless grapes 16
large or 2 small apples, cored and cut into 16 1-inch chunks 1
chopped toasted walnuts ½ cup

Thread the first of 8 skewers with one lettuce wedge, followed by a piece of chicken, a grape, and a piece of apple; repeat once more, ending with one last lettuce wedge on the end of the skewer. Repeat with remaining skewers.

Rated 5 out of 5 by kjkltz2 from LOVED IT Could use turkey breast also. Other nuts such as pecans, pepitas, sunflower seeds, almonds or cashews, toasted would be good. Drizzle some lemon juice on the apple -or- pear to prevent browning. Sliced celery, if you can get on the skewer.

This recipe ticks off several daily servings of fruit/veg and we are all happy. creative and useful. Also much easier to use HV dressing compared to the whipped cream/mayo mess. I serve toasted walnuts on the side for a protein boost, and to stay faithful to the Waldorf original.
