Here’s a recipe for our favorite Chicken and Ranch Ramen, plus a noodle salad that packs some serious sriracha heat. Give ‘em a try, and take your noodles from brick to bowl in 15 minutes or less.
Chicken and Ranch Ramen
2½ cups chicken broth
1 pack ramen noodles (omit the packet)
1 teaspoon butter
1 cup shredded chicken
½ scallion, green part only, thinly sliced
Bring the chicken broth to boil in a small saucepan. Add the noodles and cook for 2 minutes. Stir in the ranch seasoning and continue to cook for another 30 seconds.
Remove the pan from the heat and stir in the butter until incorporated. Stir in the chicken and transfer to serving bowls. Make it fancy and top with scallions. Serve immediately.
