carrots, peeled and cut into 4-in. x ¼-in. sticks 1 lb. (about 5 or 6 large)
olive oil 1½ tablespoons
cornstarch 1 teaspoon
cooking spray

Preheat an oven to 400°F. In a large bowl, combine the carrots together with the olive oil, cornstarch and ranch seasoning mix. Toss until well coated.

Spray a sheet pan with cooking spray, and spread carrots out in a single layer. Bake for 25 to 30 minutes or until crispy. Bake for 35 minutes for extra crispy fries. Serve hot.

Rated 2 out of 5 by redmama from Didn't get crisp My carrot fries didn't get crispy like they were supposed to. I followed the directions, at 28 minutes baking the fries were still limp, 2 minutes later for the maximum 30 minutes cooking, still limp. I was afraid to bake any longer as some of the ends of the carrots were turning dark. Maybe I used too much spray on the cooking sheet. I don't know. The taste wasn't that bad but I know I won't get my family to eat them unless they are crispier.
