Easy Homemade Chicken Ramen

Ingredients (7)

  • cups chicken broth
  • 1 pack ramen noodles (omit the packet)
  • 1 teaspoon butter
  • 1 cup shredded chicken
  • ½ scallion, green part only, thinly sliced
  • optional add-ins: ground turkey or beef, 1 egg (it will poach in the hot broth), spinach, corn, peas, broccoli, mushrooms, bean sprouts, mint, cilantro, basil, sesame seeds, seaweed or furikake seasoning

Steps (2)

  • Step 1

    Bring the chicken broth to boil in a small saucepan. Add the noodles and cook for 2 minutes. Stir in the ranch seasoning and continue to cook for another 30 seconds.

  • Step 2

    Remove the pan from the heat and stir in the butter until incorporated. Stir in the chicken and transfer to serving bowls. Top with scallions and serve immediately.
