Crunchy Vegetable Make-Ahead Salad

4 cups cauliflower florets
2 cups sugar snap peas, ends trimmed, stems removed and cut into 1-inch pieces
½ cup diced red bell pepper
½ cup minced red onion
3 cups shredded red cabbage
kosher salt and freshly ground black pepper to taste
Step 1In a large bowl, combine the dressing, cauliflower, snap peas, bell pepper and onion. Chill covered for at least 2 hours, overnight is best.
Step 2Season with salt and pepper and serve on a bed of red cabbage.
