Crunchy Vegetable Make-Ahead Salad

  • 2/3 cup

  • cauliflower florets

    4 cups

  • sugar snap peas, ends trimmed, stems removed and cut into 1-inch pieces

    2 cups

  • diced red bell pepper

    ½ cup

  • minced red onion

    ½ cup

  • shredded red cabbage

    3 cups

  • kosher salt and freshly ground black pepper to taste

    In a large bowl, combine the dressing, cauliflower, snap peas, bell pepper and onion. Chill covered for at least 2 hours, overnight is best.
