Ingredients (7)

  • 4 cups cauliflower florets
  • 2 cups sugar snap peas, ends trimmed, stems removed and cut into 1-inch pieces
  • ½ cup diced red bell pepper
  • ½ cup minced red onion
  • 3 cups shredded red cabbage
  • kosher salt and freshly ground black pepper to taste

Steps (2)

  • Step 1
    In a large bowl, combine the dressing, cauliflower, snap peas, bell pepper and onion. Chill covered for at least 2 hours, overnight is best.
  • Step 2
    Season with salt and pepper and serve on a bed of red cabbage.
