Ranch Chicken Tomato Pasta

dry fettuccine pasta
1 pound
olive oil
2 tablespoons
garlic, minced
2 cloves
chicken, cooked, cut into ½" slices
2 cups
2 teaspoons
cherry tomatoes, halved
1 pint
shredded parmesan cheese
½ cup
optional garnish: olive oil, fresh basil

Cook pasta according to package instructions. Reserve ½ cup of pasta water. Set pasta and water aside.

In a large skillet, heat olive oil until shimmering, add garlic, sliced chicken and HVR seasoning, cook for about 2 minutes.

Add tomatoes and cook for another 5 minutes, the tomatoes will start to release a little liquid and become jammy.

Add pasta and half of the pasta water, toss until combined. Add a little more pasta water if needed, and cook for about 2–3 minutes, until mixture is heated through.

Top each portion with parmesan, a drizzle of olive oil, and fresh basil if desired.
