Ingredients(8)
dry ditalini pasta – or your favorite pasta
2 cups
garbanzo beans, drained
1 can
garlic, whole
2 cloves
yellow onion or 1 small onion, diced
½
chicken broth
2 cups
pasta water
1 cup
6 tsp
optional garnishes: grated Parmesan, olive oil
Steps(8)
- 1
Start by boiling your pasta in water. Reserve 1 cup of water for sauce.
- 2
In another pot add garbanzo beans, onion, garlic, pasta water, chicken broth.
- 3
Simmer for 20 minutes.
- 4
Drain pasta & set aside.
- 5
Remove simmering sauce from the stove. Pour into a blender and blend on high till smooth. (If using a ninja blender- you’ll need to burp it a few times during blending since this is a hot blend and could pop the blending container.)
- 6
Pour blended sauce over pasta, give it a mix and serve!
- 7
Chef recommends garnishing with grated parmesan and a bit of olive oil — but totally optional.
- 8
Enjoy!
Ingredient Tips:
Garbanzo beans: Drain and rinse canned beans to remove excess sodium and improve flavor.
Garlic & Onion: Sauté whole garlic cloves for a mild aroma; dice the onion finely for even cooking.
Pasta water: Reserve 1 cup of pasta water to adjust sauce consistency and help it cling to noodles.
